I have to admit, cauliflower wasn’t always the vegetable I got excited about.
Steamed cauliflower? Fine.
Boiled cauliflower? Let’s just say I could take it or leave it.
But crispy roasted cauliflower?
Now we’re talking!!
When cauliflower gets roasted at a high temperature, something wonderful happens. The edges turn deeply golden and crisp, the little florets develop those delicious caramelized bits, and the inside stays tender.
Add olive oil, garlic, Parmesan, and a few simple seasonings, and suddenly cauliflower goes from an overlooked side dish to the thing everyone keeps reaching for.
And the smell when this is roasting?
Absolutely incredible.

What Is Crispy Roasted Cauliflower?
Crispy roasted cauliflower is simply fresh cauliflower florets tossed with oil and seasonings, then roasted until the edges become beautifully browned and crisp.
The trick is giving the cauliflower enough space on the baking sheet.
If the florets are packed too closely together, they’ll steam instead of roast.
But spread them out in a single layer and give them a hot oven?
That’s when the magic happens.
